We are nearing the end of the holiday season and I hope that you have slowed down enough to enjoy your time with family and friends. We have been blessed many times over in 2015 including our greatest blessing, the birth of Camille!
As we reflect on 2015, we consider ourselves blessed as we remember all of the families we had the pleasure of helping pursue their health and fitness goals each and every day. This is one of our FAVORITE recipes not just because it’s EASY to make, but because it also tastes DELICIOUS!!! We saw a similar recipe at Elana’s Pantry for “Peach Crisp.” So because we LOVE blueberries we modified it and added an extra layer of dough on the bottom! Once you try this amazing recipe you’re going to want to buy stock in blueberries – IT’S THAT GOOD! The cool part is… you can make it with ANY fruit that you want! For an additional little dessert treat, you can make healthy ice cream to go along with it! You won’t need your Carb-Ease® Plus or Crave Check SR™ for this one!
- 2 pounds blueberries
- 2½ cups blanched almond flour (we use Honeyville – click here for the ingredients we use)
- ¼ teaspoon sea salt
- 4 tablespoons butter or palm shortening
- 2 tablespoon maple syrup
- 1 teaspoon vanilla extract
- In a bowl, combine almond flour and salt, (melted) butter, maple syrup, and vanilla
- Spread a thin layer of your dough on an 8 x 8 inch baking dish
- Once the bottom is covered, pour your blueberries on top of it
- With the remaining dough, roll small balls (crumbles) to place on top of the blueberries
- Bake at 350° for 35-45 minutes
- Remove from oven, then cool and serve

Most all of our friends already know that my wife and I eat pretty healthy. We subscribe to the Paleo lifestyle mostly and have built a kitchen library of Paleo books along with multiple Paleo recipe websites. When asked about what we eat, the most common objection we get is that “it’s too expensive to eat healthy.” Well, after eating like this for over 4 years now, I can tell you that isn’t true and we’re gonna prove it. We put ourselves on a food budget and have been amazed at how little our meals have cost us. When we realized we were spending so little on food and were making so much of it, I decided to start figuring out how much each meal cost per person. We were shocked at what we discovered. We were making meals for 8 that cost us less than $12 for all of it!
There are several meals that I intend to breakdown by price over the new few weeks, but I wanted to start with the staple items that we use. Again, these are just SOME of the staple items. There are SEVERAL more, but these in particular are some of the ones we use most frequently.
Ingredient #1 – Almond Flour (you’ll want A TON of this if you eat Paleo)
Mariah and I use Honeyville Blanched Almond Flour and we get the 5 lb. bag of it from Amazon Prime because it is by far the best deal and the almond flour is also the best we have had. We also use Bob’s Red Mill Almond Flour. We’ve tried many kinds and these are the best! By the way, if you don’t have Amazon Prime… GET IT! It’s awesome! FREE 2-day shipping and as much as we order food and books it has wound up saving us money. Not to mention all the other pros that come with it like Prime InstantVideo. I’ve included a picture of what the Honeyville bag looks like that we order. The entire bag is $39.99 for 5 lbs. That’s $7.99/lb. I challenge you to find almond flour this good and this inexpensive anywhere else. The only way you’ll find it, I’m certain, is on Amazon.
The brand of Almond Flour we get depends on which one is cheaper on Amazon Prime at the time we are ordering. For instance, today the Bob’s Red Mill brand came out to $7.67/lb. So I bought 8 lbs. of it immediately. That’s one heck of a deal! I’ve also included what the Bob’s Red Mill bag looks like. Although the Honeyville almond flour is finer, we definitely love a good deal on our staple items.
Ingredient #2 – Organic Maple Syrup & Honey
One of the hardest things for most people switching to a healthy diet is a lack of desserts, BUT that’s only because they do not know how to make amazing Paleo desserts. CAUTION: They are definitely still treats. So you don’t want to load up on them. For our desserts there are quite a few items we use and two of those are organic maple syrup and honey. We mostly use maple syrup. For both of those ingredients we shop at Costco.We use the Kirkland Signature 100% Pure Organic Maple Syrup. It comes in a 33.8 oz. bottle and is about .45 cents/oz.
Ingredient #3 – Coconut Oil (This is a BIG one)
For the coconut oil we use Carrington Farms Organic Extra Virgin Coconut Oil. It comes in a 54 oz. jar for only $15.25 and goes on sale A LOT. We’ve got it as low as $15. It’s only .45 cents/oz.
Ingredient #4 – Eggs
We get our eggs from Costco too, but that’s not the only place where there are great deals on eggs. They are only about .36 cents/egg.
Ingredient #5 – Chocolate
For all you dessert lovers out there, you’re gonna love this one! We use Enjoy Life chocolate. It’s dairy, soy, & nut free! The best place we’ve seen for those is online at VitaCost.com. If you want to save $10 on your first order CLICK HERE. Beside the inexpensive cost, the next best thing is that shipping is FREE if you order more than $50, which we do regularly. I posted the image for those as well. We use the Mega Chunks and Mini Chips.
We also get our ghee from VitaCost. Ghee is clarified butter and is much healthier for you than regular ole butter. We use the Purity Farms Organic Salt Free Ghee Clarified Butter brand. You can literally save $7-8 by getting it from VitaCost as opposed to a store.
Ingredient #7 – Vegetables/Sweet Potatoes!
We eat the heck out of vegetables! Sweet Potatoes specifically are DA BOMB.COM! Mariah makes sweet potato hash brown and fries are easy to make as well. The best place to get your veggies is a local farmer’s market. We racked up this past weekend. I brought $20 and then walked out with $12 and several bags full of vegetables!
I used to be a BIG TIME soft drink drinker! Sunkist was my jam! If it wasn’t soft drinks then it was Kool-aid (tons of sugar) or Crystal Light (which has aspartame in it and is terrible for you). Instead of those terrible drinks, we simply mix our water with Spark and/or Rehydrate. They are MUCH MUCH healthier for you and better tasting. Fruit Punch Spark tastes like Hawaiian Punch to me and Green Apple tastes like an apple Jolly Rancher.

Another weekend… ANOTHER TRIP! This time we had the pleasure of hanging out with some incredible friends in my parents’ very own backyard in Orange Beach, AL! We stayed at the Caribe Resort and if you’ve never been there then I highly suggest you vacation there ASAP! It was amazing! The weather was beautiful the entire weekend as you can see in the pictures below. You’ll also be able to see God’s handy work and how beautiful his painting skills are.
We spent time at the pool, eating at some great restaurants, and even cooking in by having a shrimp boil on Saturday night to fellowship with some of our friends. AdvoCare has blessed us in so many ways. So on this trip we brought seven of our teammates with us to enjoy the fun in the sun!
The shot below is a panoramic view from “part” of our balcony. I stress the word “part” because if you look at the bottom left you’ll see that it wraps around the building!
Here I put it into perspective for you by having Mariah stand at one end of the balcony before it wraps around so that you can see how long one side of it is. For those of you that know her, you know how tall she is. She’s so far away that it makes her look short!

Mariah and I decided to take a picture the first night we were there from the balcony. The views of this place at night are almost as beautiful as they are in the daytime.

All of the trip hosts went to dinner on the first night we were down there at Cobalt. The Caribe is amazing enough, but add in this restaurant and then it’s beyond words! Cobalt has some of the BEST FOOD I’ve ever had!

I posted up to read on the balcony the first morning as we waited for our friends to arrive. No doubt… one of the best reading spots I’ve ever had the pleasure of experiencing.

The day before we left, we ate at The Gulf restaurant… ANOTHER amazing restaurant right by our condo. Quite possibly the coolest beach atmosphere I’ve ever eaten at in my life. I can’t believe I’ve never been there!
We ate there with some of our good friends and teammates Eddie and Sara Wilson! If or when you eat there… GET THE HUMMUS!
We were also joined by the newlyweds Justin and Michelle MacKay!
The food at Cobalt and The Gulf restaurants was amazing, but this might just have taken the cake! Our friends, the Butlers, and us co-hosted a Saturday night shrimp boil in our condo with my grandfather’s recipe! IT WAS AMAZIFABULOUSIFICENTLY AWESOME!
I consider myself very blessed to have as many friends as I have. Because I have a lot of friends, I know people on both ends of the financial spectrum. I know people who are doing well financially, or so it seems, and I know people who are struggling financially. For people on both ends of the spectrum… LISTEN UP!
No one would’ve guessed how poor my financial situation was 21 months ago, not even my best friends or family. I had over $200,000 in student loan and credit card debt. I was living less than paycheck to paycheck because by the time I paid my student loan payments I was having to put necessities like food and gas on credit cards, which soon led to hitting the maximum balance on each of them. So I was on the struggling side of the financial spectrum.
There are many people that are in similar situations and then there are those that are nowhere close to it; however, the ones that are nowhere close to it and can be there in a flash. I’ll give you a few real life examples in a moment. You never know what the future holds for you and your family. So the best time to prepare for it was yesterday. The next best time is now. There’s a phrase that I heard my friend Jon Butler say that made a lot of sense to me. He said, “the best time to fix a leaky roof is before it starts raining. If you try to fix it while it’s raining, it’s nearly impossible.”

Here are some real life examples of fixing the leaks of the metaphorical roof before it rains:
1. I have a friend that was doing well for himself. He didn’t have much debt, had a nice job, had a good bit of savings, and decided he just wanted to earn a little extra income on the side as a “Plan B.” So he began to build an AdvoCare business in January as an extra source of income. He very quickly began to earn about $2,000 a month. In mid April, the company that he worked for eliminated numerous positions and his was one of them. Being out of a job, he would’ve burned through his savings quickly, but because he decided to fix the leaks before it rained, he didn’t stress the elimination of his position.
That reminds me of the unforeseeable 18,000+ layoff that Microsoft announced in July. I bet that wasn’t in those employees future plans. I hope they didn’t sign a contract for a house or big purchase based on their salaries.

There’s a phrase I heard a friend say that gave me a sick feeling of disgust in my stomach because of how true it is. He told me, “As long as you are an employee, you are at the mercy of your employer to provide for your family.” That’s not something I want to live with… EVER! Your employer can pull the plug and flip the switch on your income stream in a matter of seconds. How comfortable does that make you feel? For me, not comfortable at all. It actually makes me sick to think about being at the mercy of someone else.
2. I have two other friends that are very dear to me that were in a similar situation financially except they altered their situation right before I spoke with them about earning extra income. My friends Jason and Rachel Robinson had no clue what was about to happen to them a year down the road. Rachel had just left her job and was looking for something to do to earn extra income while she looked for a new job. She quickly stopped looking for that new job after they began building their AdvoCare business. It only took a couple months to replace what Rachel was making at her old job, which allowed her to be a full-time mom to their three children. They didn’t realize how big of a blessing that was until several months down the road when they found out that their youngest son was diagnosed with autism, which required their constant attention. They are also incurring a lot of extra costs to provide for the extra training and schooling he requires. They fixed the leaks before it rained/poured.
3. Many of you now know my situation; however, no one foresaw, not even I, what my future held. I have said this before in a blog post and I said it again in front of over 300 people: “What woman would want to marry the man I was that couldn’t even take care of himself, much less someone else?” That gave me a level of disgust and drove me to fix my situation. A year after turning things around, God surprised me. He introduced me to Mariah. If anyone would’ve told me a year ago that I’d be married in May, I would’ve thought they were crazy. I didn’t foresee being married in May 2014. I would’ve thought they were even crazier if they told me I’d be having my first child in March 2015, but I guess being married and completely open to the blessing of a child that could’ve been expected. Weddings and children are accompanied with huge blessings. Unfortunately, they are also accompanied with huge costs.
The good news for us is, we didn’t have to hold off on getting married to save up for our wedding and we also are not stressing the extra costs that a child is going to bring because of a decision I made 21 months ago. That decision allowed for us to pay for our wedding in cash. That’s right… CASH. We didn’t go into further debt to get married like many couples do. We are also not stressing the financial changes a child is going to bring. We cannot wait for our little blessing to get here! We cannot thank our friends enough for introducing AdvoCare into our lives. Thanks to AdvoCare, Mariah doesn’t have to get a job and both of us have the opportunity to be full time parents when our child is born.
